Gilles Reinhardt from the world famous Paul Bocuse 3-Michelin Star Restaurant from L’Auberge du Pont de Collonges in Lyon, the first restaurant which has 3-Michelin stars for half a century without ever losing them. He was born on March 21st 1975 in Mulhouse, he grew up in a Small town of Alsace, Fellering. At the age of 5, he kept saying that he wants to be a cook; his mum made him an apron and a chef’s hat. He used to push his mum to invite people over so that he could cook with her! He started working at L’Auberge du Pont de Collonges, near Lyon, France in 1997 as the commis chef before going to work in other regions. In 2000 he became Paul Bocuse’s right-hand man. In 2004 he was crowned Meilleur Ouvrier de France (a competition held every four years to select the best craftsman in various trades which is a big deal in France and need to prepare for it one year in advance). Today he is the head chef of Bocuse’s restaurant. It was like a fairy tale for him to meet chef Bocuse, not to mention work with him.

Olivier Potier (Former Executive Pastry Chef, Sofitel Montreal) started his career as a chef, hails from the north of France and has worked at such renowned culinary institutions as La Durée Paris, famous for its macarons, and more locally in the kitchens of several hotels including The Saint James, The Saint Paul and Sofitel. Potier uses only the finest imported ingredients in his creations and the result is delicious buttery pastries.

He is using very clear flavors and have every time different textures in his desserts. He is always seasoning his desserts, first he is tasting them and then he is spicing them. He is analyzing his pastries and it makes a big difference at his profession, other pastry chefs bake from the books, but for a pastry chef his method is really unique and unusual.  Surely he is the best in gateau de voyage, the small desserts which we can see in all the French pastry boutiques.

Deff Haupt

Deff Haupt (Executive Chef Sofitel Budapest Chain Bridge) is famous about giving texture to the well-known products and surprisingly different flavors that you would imagine. Despite Deff Haupt did not dream of being a chef, he made his success very fast and soon turned out that he is a real daredevil of the gastronomy, in the first two years in his career he had won three junior cooking competitions. After that, he became a real professional in the world’s best restaurants. He worked in different three-Michelin Stars restaurants like the famous Au Crocodile in Strasbourg, and the restaurants of Chef Paul Bocuse in Lyon and Chef Joel Robuchon in Paris.

Starting from Germany, over France, Chile, Brasil through Canada, the United Arab Emirates and Egypt, he came to Hungary bringing unbeliveably exciting experiences and amazing inspirations in his pocket.

Gilles Reinhardt – a világhírű 3 Michelin-csillagos Paul Bocuse étterméből, a lyoni L’Auberge du Pont de Collongesból, az első étterem, amely 50 év alatt még sosem veszítette el a 3 Michelin-csillagot. Gilles 1975.március 21-én született Mulhouseban, és az Alsace régióban található Fellering kisvárosában nőtt fel. Már 5 évesen is azt mondta, hogy szakács szeretne lenni, ezért édesanyja készített neki egy séfkabátot és séfsapkát. Gyakran rávette anyukáját, hogy hívjon meg vendégeket, amikor főzhetett nekik. A franciaországi L’Auberge du Pont de Collonges étteremben 1997-ben kezdett el dolgozni, mint segédszakács miután más régiók éttermeiben is tevékenykedett. 2000-ben Paul Bocuse “jobbkeze” lett. 2004-ben a Meilleur Ouvrier de France versenyen koronázták meg (a versenyt minden negyedik évben rendezik meg, amely során kiválasztják a különböző szakmák legjobb mestereit, ez egy nagyon rangos esemény Franciaországban, melyre már egy évvel előtte készülni kell). Ma a Paul Bocuse étterem főszakácsa. Számára a találkozás és a közös munka Paul Bocuse-val, olyan mintha egy mesebeli álom vált volna valóra.

Olivier Potier – A Sofitel Montreal volt főcukrásza – Olivier Potier séfként kezdte pályafutását, Észak-Franciaországból indulva dolgozott olyan híres gasztronómiai intézményekben, mint a La Durée Paris, amely világhírű a macaronjairól. Valamint több helyi konyhában és számos hotel éttermében is megfordult, többek között a The Saint James, a The Saint Paul és a Sofitel szállodákban. Potier csakis a legjobb minőségű alapanyagokból készíti el alkotásait, melyek eredményei között érdemes megemlíteni a lélegzetelállítóan finom vajas süteményeit. Olivier az egyszerű és letisztult ízeket használja desszertjei elkészítésénél, és minden egyes kreációjának más és más különleges textúrát ad. Minden esetben fűszerezi a megálmodott édességeket, először megkóstolja őket, majd az ízek alapján és az arányok szerint fűszerezi, így a végeredmény mindig mennyei. Egyedisége abban is rejlik, hogy elemzi a süteményeit, és ez nagyban megkülönbözteti a többi cukrásztól, hiszen ebben a szakmában ez nem jellemző. A séfek ízlelés alapján fűszerezik az ételeket, a cukrászok viszont a könyvek alapján, a recepteket követve használják az arányokat. Ez a módszer a cukrászok világában valóban egyedi és szokatlan. Bátran mondhatjuk, hogy a Gâteaux de voyage legjobbja, vagyis azoknak a mini desszert süteménykülönlegességeknek, melyeket az összes francia cukrászdában megtalálhatunk.

Deff Haupt– A Sofitel Budapest Chain Bridge főszakácsa – Deff Haupt híres arról, hogy forradalmian új ízeket varázsol az asztalra. Deff Hauptról igazán hamar kiderült, hogy a gasztronómia vérbeli fenegyereke, hiszen már pályafutásának legelső két évében három junior főzőversenyt nyert, majd a világ több pontján elismert éttermekben vált vérbeli profivá a szakmában.Olyan Michelin csillagos éttermekben dolgozott, mint a híres Au Crocodile valamint Paul Bocuse és Joel Robuchon éttermeiben. Németországból indulva, Franciaországon, Chilén és Brazílián át, Kanadán, Egyesült Arab Emirátusokon keresztül Egyiptomból érkezett Magyarországra, hihetetlenül izgalmas tapasztalatokkal és elképesztő inspirációkkal.
